For the Salsa
  • 1 cup fresh pineapple finely diced
  • 1 ripe avocado diced
  • 1/2 red onion finely chopped
  • 1 red bell pepper chopped
  • 1/2 green bell pepper chopped
  • 1/2 jalapeno diced, seeds removed
  • 1 tablespoon lime juice
  • 1 pinch pink salt
  • 1 handful fresh cilantro chopped

Method
 

Preparation Steps
  1. Finely dice the fresh pineapple, ripe avocado, and red onion. Chop the red and green bell peppers, and dice the jalapeno.
  2. In a mixing bowl, combine pineapple, avocado, onion, red pepper, green pepper, and jalapeno. Squeeze lime juice over and add pink salt and cilantro.
  3. Mix gently until avocado is slightly mashed and all ingredients are coated.
  4. Cut a fresh pineapple in half lengthwise, scoop out the flesh, and fill the hollow shell with the salsa.
  5. Chill the salsa in the refrigerator for about 10 minutes before serving.
  6. Serve with tortilla chips or as a topping for grilled meats.
