For the Dough
  • 1 cup Whole Milk or almond milk for a non-dairy alternative
  • 1/4 cup Vegetable or Canola Oil or olive oil for a different flavor
  • 1/4 cup Granulated Sugar or brown sugar for a deeper flavor
  • 2 1/4 teaspoons Active Dry Yeast ensure it is fresh
  • 4 cups All-Purpose Flour or a 1:1 gluten-free flour blend
  • 1 teaspoon Salt use kosher or sea salt for best results
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
For the Filling
  • 1/2 cup Unsalted Butter or coconut oil for a vegan version
  • 2 tablespoons Ground Cinnamon

Method
 

Preparation Steps
  1. Gently heat the whole milk, vegetable oil, and granulated sugar until warm, but not boiling. Remove from heat, sprinkle in active dry yeast, and let sit for 1 minute until bubbles form.
  2. In a large bowl, combine all-purpose flour and salt. Gradually add the yeast mixture and stir until just combined. Cover and let rise for about 1 hour.
  3. Fold in baking powder and baking soda into the risen dough, then knead lightly on a floured surface for 1-2 minutes.
  4. Roll the dough into a large rectangle. Brush with melted butter, then sprinkle with sugar, cinnamon, orange zest, pistachios, and dark chocolate. Roll tightly.
  5. Cut the rolled dough into 12 even pieces and place in a greased baking dish. Cover and let rest for about 15 minutes.
  6. Preheat the oven to 375°F (190°C) and bake the rolls for 20-22 minutes until golden brown.
  7. Prepare the glaze by whisking powdered sugar with milk or water. Once the rolls cool slightly, drizzle glaze over them and serve.
