Dough Preparation
- In a mixing bowl, combine 1 cup of warm water with 2 teaspoons of dry yeast. Stir gently and let it sit for about 5-10 minutes, until frothy.
- Once the yeast is activated, add 2 cups of flour, 4 tablespoons of melted butter, and 1 teaspoon of salt. Stir until a sticky dough forms.
- Cover the bowl with a clean towel and refrigerate for at least 12 hours.
- Preheat the oven to 425°F. Grease the baking sheet with butter and avocado oil, then spread the chilled dough evenly.
- In a saucepan, bring 4 cups of water to a boil, stir in 1/4 cup of baking soda. Brush the dough with the wash.
- Let the dough rise in the greased sheet for 1 to 2 hours until puffed up.
- Brush with melted butter and sprinkle with pretzel salt. Bake for 20-25 minutes until golden brown.
Cheese Sauce Preparation
- In a saucepan, melt 4 tablespoons of butter. Stir in flour to create a roux, cooking for about 2 minutes.
- Gradually add 1 cup of milk and 1 cup of beer, whisking until smooth and thickened. Stir in cheeses until melted.
Serving
- Once the Pretzel Focaccia is out of the oven, let it cool before slicing. Serve warm with cheese sauce.
