  • 4 cups Boiling Water For baking soda brushing.
  • 1/4 cup Baking Soda
  • 2 tablespoons Avocado Oil Vegetable oil is a substitute.
  • 1 tablespoon Pretzel Salt Coarse sea salt can be a replacement.
For the Cheese Dipping Sauce
  • 4 tablespoons Butter Base for sauce.
  • 4 tablespoons Flour Thickens the sauce.
  • 1 cup Milk Whole milk is best.
  • 1 cup Beer Use vegetable broth for a non-alcoholic option.
  • 1 cup Sharp Cheddar Cheese Mozzarella can be used for a milder flavor.
  • 1 cup Gruyere Cheese Emmental is a good substitute.
  • 1 teaspoon Onion Powder Shallot powder is a fine alternative.
  • 1/4 teaspoon Cayenne Pepper Adjust for heat preference.
  • 1 teaspoon Paprika Smoked paprika can offer a twist.

Method
 

Dough Preparation
  1. In a mixing bowl, combine 1 cup of warm water with 2 teaspoons of dry yeast. Stir gently and let it sit for about 5-10 minutes, until frothy.
  2. Once the yeast is activated, add 2 cups of flour, 4 tablespoons of melted butter, and 1 teaspoon of salt. Stir until a sticky dough forms.
  3. Cover the bowl with a clean towel and refrigerate for at least 12 hours.
  4. Preheat the oven to 425°F. Grease the baking sheet with butter and avocado oil, then spread the chilled dough evenly.
  5. In a saucepan, bring 4 cups of water to a boil, stir in 1/4 cup of baking soda. Brush the dough with the wash.
  6. Let the dough rise in the greased sheet for 1 to 2 hours until puffed up.
  7. Brush with melted butter and sprinkle with pretzel salt. Bake for 20-25 minutes until golden brown.
Cheese Sauce Preparation
  1. In a saucepan, melt 4 tablespoons of butter. Stir in flour to create a roux, cooking for about 2 minutes.
  2. Gradually add 1 cup of milk and 1 cup of beer, whisking until smooth and thickened. Stir in cheeses until melted.
Serving
  1. Once the Pretzel Focaccia is out of the oven, let it cool before slicing. Serve warm with cheese sauce.
