Ingredients
  

Syrup
  • 1 cup Sugar Can be substituted with honey or agave nectar.
  • 1 cup Water Use filtered water for best flavor.
  • 2 cups Peach Fresh or canned, adjust sweetness as needed.
  • 1 stem Rosemary Twig Dried rosemary can substitute at 1/3 the amount.
Lemonade
  • 1 cup Lemon Juice Freshly squeezed from about 5 lemons.

Method
 

Prepare the Syrup
  1. Wash the peach and slice it into thin pieces. In a saucepan, combine peach slices with sugar, water, and rosemary. Heat on medium until sugar dissolves, about 5 minutes.
  2. Cover the pot and remove from heat, allowing it to steep for 10 minutes.
Strain the Syrup
  1. Strain the syrup through a fine-mesh sieve into a bowl. Press on solids to extract syrup and discard remnants.
  2. Let syrup cool to room temperature for about 10-15 minutes.
Mix the Lemonade
  1. Juice the lemons to yield 1 cup of juice. In a pitcher, combine cooled syrup and lemon juice, and 4 cups of filtered water, adjusting to taste.
  2. Stir well until blended.
Serve and Garnish
  1. Fill glasses with ice and pour the lemonade over. Garnish with a sprig of rosemary or a slice of peach.
