- Begin by thinly slicing 2-3 fresh strawberries and set them aside on a cutting board.
- In a high-speed blender, combine the remaining fresh strawberries, honey, chia seeds, and lemon juice. Blend until smooth, about 30 seconds.
- Line the sides of your popsicle molds with the sliced strawberries. Pour the blended mixture into each mold, filling them about ¾ full.
- Insert the sticks and place the molds in the freezer. Allow to freeze for at least 4 hours, preferably overnight.
- To release the popsicles, run warm water over the outside of the molds for a few seconds, then gently pull on the sticks to remove.
