Method
 

Step-by-Step Instructions
  1. Begin by thinly slicing 2-3 fresh strawberries and set them aside on a cutting board.
  2. In a high-speed blender, combine the remaining fresh strawberries, honey, chia seeds, and lemon juice. Blend until smooth, about 30 seconds.
  3. Line the sides of your popsicle molds with the sliced strawberries. Pour the blended mixture into each mold, filling them about ¾ full.
  4. Insert the sticks and place the molds in the freezer. Allow to freeze for at least 4 hours, preferably overnight.
  5. To release the popsicles, run warm water over the outside of the molds for a few seconds, then gently pull on the sticks to remove.
