Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine sugar and vegetable oil, blending until smooth and creamy.
  2. Add the eggs and vanilla extract, stirring until well combined.
  3. In a separate bowl, sift together flour, salt, baking powder, and cocoa powder.
  4. Gradually incorporate dry ingredients into the wet mixture until just combined.
  5. Wrap the prepared dough tightly in plastic wrap and chill in the refrigerator for at least 1 hour.
  6. Preheat your oven to 350°F (175°C) while the dough chills.
  7. Roll out the chilled dough to about ¼-inch thickness and cut out discs.
  8. Add chocolate chunks and whole almonds to the center of each disc.
  9. Fold and pinch the edges tightly to form triangular shapes.
  10. Bake on a lined baking sheet for 13-15 minutes. Add mini marshmallows in the last 2 minutes.
  11. Transfer cookies to a wire rack to cool before serving.
