Preparation Steps
  1. Finely mince the shallot and set aside.
  2. Juice one lemon and one lime into a bowl, aiming for about 3 tablespoons of each.
  3. If the salmon isn't pre-sliced, slice against the grain into ¼-inch thick pieces.
  4. In the bowl with the citrus juices, add the minced shallot and soy sauce, then whisk until combined.
  5. Drizzle 1 tablespoon of olive oil over the arranged salmon.
  6. Drizzle an additional tablespoon of olive oil over the salmon slices.
  7. Pour the citrus soy dressing around the salmon pieces.
  8. Garnish with sliced scallions, chives, or micro-greens, and finish with a sprinkle of flaky salt.
