Step-by-Step Instructions
  1. Cut the salmon fillet into large cubes, around 1 to 2 inches. Sprinkle taco seasoning over the salmon.
  2. Preheat the oven to 400°F (200°C). Bake the seasoned salmon cubes for about 10 to 12 minutes until flaky.
  3. In a mixing bowl, combine diced mango, sweet corn, and cucumber. Add lime juice and optional honey. Stir gently.
  4. Heat a skillet over medium heat and warm tortillas for about 30 seconds on each side until pliable.
  5. Assemble tacos with a tortilla filled with salmon and topped with mango corn salsa and lime juice.
