Method
 

Directions
  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin.
  2. In a large mixing bowl, whisk the dry ingredients together.
  3. In a separate bowl, whisk the wet ingredients until smooth.
  4. Combine the wet and dry mixtures gently until just mixed.
  5. Cook the sausage in a skillet until browned, then cool.
  6. Fold the cooled sausage into the batter until evenly distributed.
  7. Fill each muffin cup about two-thirds full with the batter.
  8. Bake for 18–22 minutes or until golden brown and a toothpick comes out clean.
  9. Allow to cool for 5 minutes in the pan, then transfer to a wire rack.
  10. Prepare the optional glaze by mixing powdered sugar with a splash of milk and drizzle over muffins.
