- Preheat your oven to 375°F (190°C) and prepare a muffin tin.
- In a large mixing bowl, whisk the dry ingredients together.
- In a separate bowl, whisk the wet ingredients until smooth.
- Combine the wet and dry mixtures gently until just mixed.
- Cook the sausage in a skillet until browned, then cool.
- Fold the cooled sausage into the batter until evenly distributed.
- Fill each muffin cup about two-thirds full with the batter.
- Bake for 18–22 minutes or until golden brown and a toothpick comes out clean.
- Allow to cool for 5 minutes in the pan, then transfer to a wire rack.
- Prepare the optional glaze by mixing powdered sugar with a splash of milk and drizzle over muffins.
