Step‑by‑Step Instructions for Greek Chicken Gyros
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine chicken thighs with olive oil, honey Dijon mustard, minced garlic, lemon zest, salt, and dried oregano. Cover the bowl and let the chicken marinate for at least 1 hour, or ideally, overnight in the refrigerator.
  3. Thread the marinated chicken thighs onto a vertical gyro spit plate or use bamboo skewers.
  4. Place the skewer or gyro spit onto a baking sheet lined with parchment paper. Pour about a cup of water or vegetable stock into the baking sheet.
  5. Roast the chicken in the preheated oven for 75 to 90 minutes, or until the internal temperature reaches 165°F (74°C).
  6. After roasting, let the chicken rest for about 5 minutes. Once rested, slice the chicken into thin strips.
