- Preheat your oven to 400°F (200°C). Grease the baking dish with olive oil.
- In a small bowl, whisk together olive oil, diced chipotle peppers, adobo sauce, brown sugar, smoked paprika, ground cumin, dried oregano, and kosher salt.
- Toss the sliced bell peppers, shallots, and minced garlic with about 2 tablespoons of the marinade. Spread them in the greased baking dish and bake for 25-30 minutes.
- While the vegetables bake, coat your cod fillets with the remaining marinade. Let them sit for 10-15 minutes.
- After baking, gently stir the peppers and create a space in the dish for the cod. Bake for an additional 10-12 minutes until the cod flakes easily.
- Remove from oven and squeeze fresh lime juice over the dish before serving with cilantro, quinoa, black beans, and avocado.
