  • 2 tablespoons Olive Oil Or avocado oil
  • 2 pieces Chipotle Peppers in Adobo Adjust for spice tolerance
  • 2 tablespoons Adobo Sauce From chipotle can
  • 1 tablespoon Brown Sugar Coconut sugar can be used
  • 1 teaspoon Smoked Paprika Regular paprika can be used
  • 1 teaspoon Ground Cumin Coriander can be an alternative

  • 2 cups Bell Peppers (Red/Yellow) Green can be an alternative
  • 2 pieces Shallots Yellow onions can substitute
  • 3 cloves Garlic Adjust to preference
For Serving
  • 2 tablespoons Lime Juice Fresh is best
  • 1/4 cup Fresh Cilantro Or use parsley
  • 1 cup Cooked Quinoa Optional nutritious topping
  • 1 cup Black Beans Optional topping
  • 1 avocado Avocado Optional topping

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Grease the baking dish with olive oil.
  2. In a small bowl, whisk together olive oil, diced chipotle peppers, adobo sauce, brown sugar, smoked paprika, ground cumin, dried oregano, and kosher salt.
  3. Toss the sliced bell peppers, shallots, and minced garlic with about 2 tablespoons of the marinade. Spread them in the greased baking dish and bake for 25-30 minutes.
  4. While the vegetables bake, coat your cod fillets with the remaining marinade. Let them sit for 10-15 minutes.
  5. After baking, gently stir the peppers and create a space in the dish for the cod. Bake for an additional 10-12 minutes until the cod flakes easily.
  6. Remove from oven and squeeze fresh lime juice over the dish before serving with cilantro, quinoa, black beans, and avocado.
