Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and lightly grease a 13×9-inch baking dish.
  2. Mix salsa with taco seasoning, then spread 1 cup of the mixture across the bottom of the greased dish.
  3. Layer 7 tostadas over the salsa, add half of the creamy beans, half of the scallions, and 1 cup of shredded cheese.
  4. Repeat the layers with another cup of salsa, remaining tostadas, remaining beans, remaining scallions, and another cup of cheese, adding extra salsa on top.
  5. Create six small wells in the salsa layer and crack an egg into each, seasoning with salt and pepper.
  6. Cover tightly with aluminum foil and bake for 35-45 minutes, checking at 35 minutes.
  7. Let the casserole rest for 5 minutes before serving.
