Step‑by‑Step Instructions
  1. Heat the Oil: In a pot, pour vegetable oil and heat over medium-high. Wait 2 minutes until it glistens.
  2. Brown the Beef: Add beef chuck cubes in a single layer, sear for 5-7 minutes until deep brown.
  3. Sauté Aromatics: Add chopped onions and minced garlic. Sauté for 3-4 minutes until translucent.
  4. Incorporate Tomatoes: Add chopped tomatoes; cook for 3-5 minutes until they soften.
  5. Season the Stew: Sprinkle in cumin, chili powder, paprika, oregano, salt, and pepper; stir for 1 minute.
  6. Add Liquids: Pour in beef broth and water, scrape the pot bottom. Bring to a gentle boil.
  7. Simmer with Bay Leaf: Add a bay leaf, reduce heat, cover and simmer for 1.5 to 2 hours.
  8. Add Optional Vegetables: Add bell peppers and carrots 30 minutes before cooking concludes.
  9. Adjust and Serve: Taste and adjust seasoning, remove the bay leaf, and serve over rice or in tortillas.
