  • 4 cups Brine (water and kosher salt) Adjust brining time for taste preference.
For the Breading
  • 1 cup Flour Feel free to swap in gluten-free flour if needed.
  • 1 large Egg Can be replaced with a flax egg for vegan option.
  • 1 cup Milk Any plant-based milk works well.
  • 1 cup Toasted Panko Toast your own or buy pre-toasted.
For the Assembly
  • 4 pieces Brioche Buns Any burger bun can work in a pinch.
  • 2 tbsp Seasoning Blend Includes garlic powder, onion powder, paprika, kosher salt, oregano, and black pepper.

Preparation
  1. Dissolve kosher salt in a pot of hot water and cool to room temperature. Submerge chicken thighs in the brine for 30 minutes to overnight.
  2. Mix toasted panko with melted butter. Preheat air fryer to 400°F and cook panko mixture for 2-3 minutes until golden brown.
  3. Set out three shallow dishes: flour, egg and milk mixture, and toasted panko for breading.
  4. Pat dry brined chicken thighs, drizzle with olive oil, and coat generously with the seasoning blend.
  5. Bread chicken by dipping in flour, then egg wash, and finally pressing into the toasted panko.
  6. Cook chicken in air fryer at 400°F for 8-10 minutes, flipping halfway, until internal temperature reaches 165°F.
  7. Lightly toast brioche buns in air fryer for about 2 minutes. Assemble sandwiches with chicken and favorite toppings.
