Step‑by‑Step Instructions for Beef Tagine
  1. Chop one large onion, mince three cloves of garlic, slice two medium carrots, and a cup of dried apricots. Gather spices.
  2. In a large pot, heat 2 tablespoons of olive oil. Sauté onions and garlic for 5-7 minutes until translucent.
  3. Increase heat to medium-high, add 2 pounds of beef chuck, and sear for 5-7 minutes until browned.
  4. Add chopped carrots, sliced apricots, 1 teaspoon each of cinnamon, ginger, cumin, and coriander. Sauté for 2-3 minutes.
  5. Pour in 3 cups of beef broth, bring to a boil, reduce heat to low, cover, and let simmer for 2 hours.
  6. Once beef is tender, adjust seasoning with salt and pepper, and serve warm with couscous or bread.
