Preparation
- Preheat your oven to 375°F (190°C) and line a muffin tin with cupcake liners.
- In a large mixing bowl, combine the ground beef, finely minced onion, minced garlic, breadcrumbs, eggs, Worcestershire sauce, salt, and pepper.
- Divide the meat mixture evenly among the prepared muffin tin cups, filling each about three-quarters full.
- Place the muffin tin in the preheated oven and bake for 20 minutes.
- Brush the tops generously with Smoky Bourbon BBQ sauce after baking.
- Prepare your creamy mashed potatoes while the meatloaf cupcakes cool slightly.
- Spoon or pipe a generous dollop of mashed potatoes on top of each cupcake.
- Sprinkle shredded cheddar cheese over the mashed potato topping, then bake for an additional 10 minutes.
- Allow to cool for a few minutes before serving.
