- Preheat your oven to 350°F (175°C) and gather your ingredients.
- Pat the chicken thighs dry, then season both sides with salt and pepper.
- Heat olive oil in a Dutch oven over medium heat, and sear chicken thighs skin-side down for 4-5 minutes until golden brown.
- Flip and sear the other side for 2 minutes until caramelized.
- Whisk together the Catalina sauce ingredients in a medium bowl until smooth.
- Pour half of the sauce into the Dutch oven, placing the chicken skin-side up and drizzling with the remaining sauce.
- Cover and bake for 45 minutes, then remove the lid and bake for an additional 20-25 minutes.
