Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and gather your ingredients.
  2. Pat the chicken thighs dry, then season both sides with salt and pepper.
  3. Heat olive oil in a Dutch oven over medium heat, and sear chicken thighs skin-side down for 4-5 minutes until golden brown.
  4. Flip and sear the other side for 2 minutes until caramelized.
  5. Whisk together the Catalina sauce ingredients in a medium bowl until smooth.
  6. Pour half of the sauce into the Dutch oven, placing the chicken skin-side up and drizzling with the remaining sauce.
  7. Cover and bake for 45 minutes, then remove the lid and bake for an additional 20-25 minutes.
  8. Serve hot, garnished with parsley and drizzled with sauce.
