Method
 

Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Finely dice the onion, mince the garlic, and chop the parsley.
  3. In a large mixing bowl, combine ground chicken, onion, garlic, egg, Dijon mustard, Parmesan, parsley, salt, pepper, and panko breadcrumbs.
  4. Shape the mixture into an 8x12-inch rectangle on parchment paper, lay slices of ham and cheese on top.
  5. Roll the mixture using the parchment paper, pinching seams to secure.
  6. Mix remaining panko breadcrumbs with melted butter and sprinkle over the top of the meatloaf.
  7. Bake for about 75 minutes, or until the internal temperature reaches 165°F (74°C).
  8. Melt butter in a saucepan, whisk in flour, then gradually stir in milk to thicken into a sauce. Mix in Dijon and Parmesan.
  9. Let meatloaf rest for 10 minutes before slicing; serve with creamy sauce.
