- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- Finely dice the onion, mince the garlic, and chop the parsley.
- In a large mixing bowl, combine ground chicken, onion, garlic, egg, Dijon mustard, Parmesan, parsley, salt, pepper, and panko breadcrumbs.
- Shape the mixture into an 8x12-inch rectangle on parchment paper, lay slices of ham and cheese on top.
- Roll the mixture using the parchment paper, pinching seams to secure.
- Mix remaining panko breadcrumbs with melted butter and sprinkle over the top of the meatloaf.
