Step-by-Step Instructions
  1. In a large mixing bowl, combine ground chicken, bread crumbs, grated Parmesan cheese, and one beaten egg. Add in the minced garlic, finely chopped onion, freshly squeezed lemon juice, and capers. Season generously with salt and pepper to taste. Mix until just combined.
  2. Shape the mixture into bite-sized balls, about 1 inch in diameter, and place them on a parchment-lined baking sheet.
  3. Preheat your oven to 400°F (200°C) and bake the meatballs for 20-25 minutes until golden brown and the internal temperature reaches 165°F (74°C).
  4. While baking, heat a skillet over medium heat with olive oil, add the remaining lemon juice and capers, and let it simmer for about 5 minutes.
  5. Carefully transfer the baked meatballs to the skillet with the sauce and let them simmer for an additional 2-3 minutes. Serve hot garnished with fresh parsley.
