Step-by-Step Instructions for Chili Rice Casserole
- Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
- Dice the red bell pepper, onion, and jalapeno, reserving some for topping later.
- Rinse the long grain white rice under cold water until the water runs clear.
- In your prepared baking dish, combine the rinsed rice, drained beans, tomatoes, tomato sauce, diced onion, bell pepper, jalapeno, broth, and spices. Stir well.
- Cover the baking dish tightly with aluminum foil and bake for 30-40 minutes.
- Once cooked, mix in the lime juice and zest, and fold in half of the shredded cheese.
- Remove the foil and return to the oven to bake for another 5-10 minutes until the cheese melts.
- Garnish with reserved veggies and serve hot with sour cream or Greek yogurt on top.
