- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Assemble each tortilla with roast beef and shredded cheese in the center, leaving space at the edges.
- Roll the tortillas tightly from the bottom, tucking in the sides as you go and place seam-side down on the baking sheet.
- Brush melted butter over each roll up and sprinkle with garlic powder, onion powder, and parsley.
- Bake for 12–15 minutes until tortillas are golden brown and cheese is bubbling.
- Simmer beef broth, Worcestershire sauce, soy sauce, garlic powder, onion powder, and seasonings in a saucepan for 5–7 minutes to create au jus.
- Slice roll ups into bite-sized pieces and serve warm with the au jus.
