Preparation
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine halved Brussels sprouts and cubed butternut squash. Drizzle with olive oil and honey, season with salt and pepper, and toss well.
- Spread vegetable mixture on the baking sheet and roast for 25 to 30 minutes, flipping halfway through.
- Remove from oven, sprinkle crumbled bacon and dried cranberries over the warm vegetables, and stir gently to combine.
- Top with crumbled feta cheese just before serving.
