  1. Begin by combining the chicken thighs with soy sauce, dark soy sauce, oyster sauce, black pepper, and cornstarch in a bowl. Ensure the chicken is well-coated in the marinade, then let it rest for about 10 minutes.
  2. While the chicken is marinating, take this time to chop the scallions. Slice the white parts finely and set them aside, then chop the green parts roughly.
  3. Heat a non-stick pan over medium heat and add a tablespoon of oil. Add the marinated chicken thighs. Cook for around 6-8 minutes on each side until they are golden brown and cooked through.
  4. Once the chicken is nearly done, stir in the chopped white parts of the scallions. Cook for another 2-3 minutes until they are softened and fragrant.
