- Begin by combining the chicken thighs with soy sauce, dark soy sauce, oyster sauce, black pepper, and cornstarch in a bowl. Ensure the chicken is well-coated in the marinade, then let it rest for about 10 minutes.
- While the chicken is marinating, take this time to chop the scallions. Slice the white parts finely and set them aside, then chop the green parts roughly.
- Heat a non-stick pan over medium heat and add a tablespoon of oil. Add the marinated chicken thighs. Cook for around 6-8 minutes on each side until they are golden brown and cooked through.
- Once the chicken is nearly done, stir in the chopped white parts of the scallions. Cook for another 2-3 minutes until they are softened and fragrant.
- Finally, plate your beautifully cooked scallion chicken alongside steaming rice or noodles and garnish with extra scallions or a touch of black pepper.
