Step-by-Step Instructions
  1. Rinse the scallions thoroughly under cold water and chop them finely, separating the white parts from the green tops. Set aside.
  2. In a bowl, mix 2 tablespoons of light soy sauce, 1 tablespoon of dark soy sauce, and 1 teaspoon of sugar until dissolved.
  3. Heat 3 tablespoons of cooking oil in a skillet over medium heat and fry the white scallions for 2-3 minutes until fragrant and golden brown.
  4. Remove fried scallions and let the oil cool while retaining the flavor.
  5. Boil water in a pot, add 250 grams of wheat noodles, and cook according to package instructions, usually 3-5 minutes until al dente.
  6. Drain the noodles and return them to the pot. Add the scallion-infused oil and the sauce, tossing gently until well coated.
  7. Sprinkle crispy fried green onions over the noodles and serve immediately.
