- In a small bowl, combine mayo, honey, Dijon mustard, minced fresh thyme, garlic powder, onion powder, and season with salt and pepper to taste. Whisk together until smooth and set aside for 10 minutes to allow flavors to blend.
- Spread a generous layer of the creamy thyme dressing evenly across one side of each flour tortilla.
- On top of the dressing, place a handful of mixed greens, followed by thinly sliced red onion, turkey breast, cheese slices, and sliced avocado.
- Starting at one end, tightly roll each tortilla up to form a secure cylinder, sealing with a bit of extra dressing on the edge.
- Slice the roll ups into 5-6 pinwheels and arrange on a platter. Serve with extra creamy thyme dressing if desired.
