  • 3 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Rice Vinegar
  • 1 teaspoon Ginger Grated
  • 2 cloves Garlic Minced
For Garnish
  • 2 tablespoons Toasted Sesame Seeds Sprinkled on top

Method
 

Step-by-Step Instructions
  1. Preheat your grill or grill pan over medium-high heat, about 5 minutes.
  2. In a small bowl, whisk together sesame oil, soy sauce, honey, salt, and pepper until combined.
  3. Coat the chicken breasts generously with the marinade and let rest for at least 10 minutes.
  4. Grill the marinated chicken for 6-7 minutes on each side until cooked through.
  5. Allow the grilled chicken to rest for 5 minutes, then slice into strips.
  6. In a large bowl, combine chickpeas, cherry tomatoes, mixed greens, cucumber, and red onion.
  7. In another bowl, whisk extra virgin olive oil, rice vinegar, ginger, garlic, and salt together for the dressing.
  8. Drizzle the dressing over the salad and mix gently to coat.
  9. Top the salad with the sliced chicken strips and sprinkle with toasted sesame seeds.
  10. Serve immediately, optionally with lemon wedges.
