- Preheat your oven to 425°F (220°C). Gather all your ingredients and grease your baking sheet with olive oil.
- In a large bowl, combine sliced red, yellow, and orange bell peppers with sweet onion and minced garlic. Drizzle with 2 tablespoons of olive oil and half of the chili powder mixture. Toss well and spread on the baking sheet.
- Roast the vegetable mixture for about 10 minutes until the peppers are tender and slightly caramelized.
- In a mixing bowl, combine thawed shrimp with remaining olive oil and chili powder mixture, stirring to coat.
- Push the vegetables to one side of the baking sheet and spread the seasoned shrimp on the other side. Bake for another 6-8 minutes until shrimp are pink and firm.
- Stir in freshly chopped cilantro and a squeeze of lime juice. Serve immediately with warm tortillas.
