  • 1 cup Pineapple, chunks
  • 1 cup Red bell pepper, sliced
  • 1 cup Yellow bell pepper, sliced
  • 1 small Red onion, sliced
  • 2 tbsp Olive oil
For the Sauce
  • 1 cup Teriyaki sauce
  • 2 tbsp Soy sauce
  • 2 tbsp Honey
  • 1 tbsp Rice vinegar
For Seasoning & Garnish
  • 1 tsp Garlic powder
  • to taste Salt
  • to taste Pepper
  • 2 tbsp Sesame seeds for garnish
  • 2 tbsp Green onions, sliced for garnish
For Serving
  • 4 cups Cooked rice optional

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).

  2. In a mixing bowl, combine pineapple, bell peppers, and red onion. Drizzle with olive oil, garlic powder, salt, and pepper, and toss to coat.

  3. Spread the chicken breasts and vegetable mixture on a baking sheet in a single layer.

  4. In a separate bowl, mix teriyaki sauce, soy sauce, honey, and rice vinegar. Drizzle over the chicken and vegetables.
