  • 1 lb raw shrimp peeled and deveined
  • 1 large ripe avocado cubed
  • 1 large mango cubed
  • 1/2 large red onion finely diced
  • 1/4 cup fresh cilantro chopped
Dressing
  • 2 tablespoons lime juice
  • 1 teaspoon honey drizzle
  • to taste salt
  • to taste pepper

  • 4 cups cooked rice or greens like spinach or quinoa

  • to taste crushed tortilla chips
  • 1 lime wedge for garnish

Method
 

Preparation
  1. Heat a large skillet over medium-high heat. Add olive oil and sauté the raw shrimp for about 3-4 minutes until pink and opaque. Remove from heat to cool slightly.
  2. Chop avocado and mango into bite-sized cubes, dice red onion, and chop cilantro. Set aside.
  3. In a small bowl, whisk together lime juice, honey, salt, and pepper to make the dressing. Adjust seasoning to taste.
  4. In a large mixing bowl, combine sautéed shrimp, chopped avocado, mango, onion, and cilantro. Drizzle the dressing and toss gently without mashing the avocado.
  5. Serve the mixture over a bed of cooked rice or greens. Top with sesame seeds or tortilla chips.
  6. Garnish the bowl with lime wedges and extra cilantro. Serve immediately.
