Preparation
- Heat a large skillet over medium-high heat. Add olive oil and sauté the raw shrimp for about 3-4 minutes until pink and opaque. Remove from heat to cool slightly.
- Chop avocado and mango into bite-sized cubes, dice red onion, and chop cilantro. Set aside.
- In a small bowl, whisk together lime juice, honey, salt, and pepper to make the dressing. Adjust seasoning to taste.
- In a large mixing bowl, combine sautéed shrimp, chopped avocado, mango, onion, and cilantro. Drizzle the dressing and toss gently without mashing the avocado.
- Serve the mixture over a bed of cooked rice or greens. Top with sesame seeds or tortilla chips.
- Garnish the bowl with lime wedges and extra cilantro. Serve immediately.
