Salmon and Salsa
  • 28 oz Salmon Cut into four 7-oz fillets; rich in omega-3 fatty acids.
  • 1 large Avocado Diced into 1/2-inch cubes.
  • 1 ripe Mango Peeled and diced into 1/2-inch pieces.
  • 1 large Lime Cut into wedges.
  • 2 tbsp Fresh Cilantro Chopped.

Method
 

Preparation Steps
  1. In a medium bowl, combine all the dry spices for the jerk spice rub and whisk well.
  2. Pat the salmon fillets dry with paper towels on both sides.
  3. Dice the avocado, peel and dice the mango, cut the lime into wedges, and chop the cilantro.
  4. Brush the skin-side of the salmon with avocado oil and coat the flesh side with the jerk spice rub, then sprinkle with sea salt.
  5. Preheat the grill to between 400°F and 450°F and oil the grate.
  6. Place the salmon fillets skin-side down on the grill and grill for 3 to 4 minutes. Flip and grill for an additional 3 to 4 minutes.
  7. Remove the salmon from the grill and let it rest for about 3 minutes. Serve with avocado and mango on top and lime juice.
