Preparation Steps
- In a medium bowl, combine all the dry spices for the jerk spice rub and whisk well.
- Pat the salmon fillets dry with paper towels on both sides.
- Dice the avocado, peel and dice the mango, cut the lime into wedges, and chop the cilantro.
- Brush the skin-side of the salmon with avocado oil and coat the flesh side with the jerk spice rub, then sprinkle with sea salt.
- Preheat the grill to between 400°F and 450°F and oil the grate.
- Place the salmon fillets skin-side down on the grill and grill for 3 to 4 minutes. Flip and grill for an additional 3 to 4 minutes.
- Remove the salmon from the grill and let it rest for about 3 minutes. Serve with avocado and mango on top and lime juice.
