  • 1 cup Shredded Cheese Options include cheddar, colby jack, or pepper jack.

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of avocado oil in a large skillet over medium-high heat for about 1-2 minutes.
  2. Add 2 cups of cubed Yukon gold potatoes to the skillet and cook for 5-6 minutes until golden brown.
  3. Push the potatoes aside and add 1 pound of lean ground beef. Cook until browned, about 4-5 minutes.
  4. Stir in 1 diced yellow onion and 1 diced red bell pepper. Cook for 3-4 minutes until veggies soften.
  5. Add 1 can of diced green chiles, 1 tablespoon of chili powder, 1 teaspoon of ground cumin, and 1 teaspoon of smoked paprika. Cook for 2-3 minutes.
  6. Cover and cook for an additional 6-8 minutes until potatoes are tender. Check with a fork.
  7. Adjust seasoning and sprinkle 1 cup of shredded cheese on top. Cover to let it melt for 2-3 minutes.
  8. Garnish with fresh cilantro and serve hot.
