- Heat 2 tablespoons of avocado oil in a large skillet over medium-high heat for about 1-2 minutes.
- Add 2 cups of cubed Yukon gold potatoes to the skillet and cook for 5-6 minutes until golden brown.
- Push the potatoes aside and add 1 pound of lean ground beef. Cook until browned, about 4-5 minutes.
- Stir in 1 diced yellow onion and 1 diced red bell pepper. Cook for 3-4 minutes until veggies soften.
