Step-by-Step Instructions
  1. Heat 1 tablespoon of olive oil and ½ tablespoon of butter in a skillet over medium-high heat.
  2. Add the sliced zucchini, season with salt and pepper, and sauté for about 3-4 minutes.
  3. In the same skillet, add remaining butter and diced onion; cook for about 2 minutes.
  4. Introduce the sliced mushrooms and cook for 5-7 minutes until browned.
  5. Stir in the minced garlic and fresh herbs, cooking for about 20 seconds.
  6. Return sautéed zucchini to the skillet, adding vegetable broth; simmer for 2 minutes.
  7. Adjust seasoning, finish with fresh parsley and Parmesan cheese, and serve warm.
