- Prep the ingredients by peeling and chopping the potatoes into bite-sized pieces, slicing the carrots, coarsely chopping the onion, and mincing the garlic.
- Layer the ingredients in the slow cooker, starting with the beef short ribs, followed by the potatoes, carrots, onion, garlic, ginger, and optional sesame seeds.
- In a medium bowl, whisk together the soy sauce, beef broth, honey (or pear), and sesame oil. Add crushed red pepper if desired, and pour the mixture over the meat and vegetables.
- Cover and cook on low for about 6 hours until the ribs are tender and flavors are melded.
- Once cooked, serve the ribs over steamed rice or noodles, garnished with sesame seeds and green onions.
