  1. Prep the ingredients by peeling and chopping the potatoes into bite-sized pieces, slicing the carrots, coarsely chopping the onion, and mincing the garlic.
  2. Layer the ingredients in the slow cooker, starting with the beef short ribs, followed by the potatoes, carrots, onion, garlic, ginger, and optional sesame seeds.
  3. In a medium bowl, whisk together the soy sauce, beef broth, honey (or pear), and sesame oil. Add crushed red pepper if desired, and pour the mixture over the meat and vegetables.
  4. Cover and cook on low for about 6 hours until the ribs are tender and flavors are melded.
  5. Once cooked, serve the ribs over steamed rice or noodles, garnished with sesame seeds and green onions.
