- In a skillet over medium heat, brown the ground beef, breaking it up and cooking for 5–7 minutes until no longer pink. Drain excess fat.
- Stir in the taco seasoning mix and Ro-Tel into the skillet. Let simmer for 3–5 minutes.
- In the slow cooker, combine the cheddar cheese soup, cream of mushroom soup, and milk. Whisk until smooth.
- Fold the beef mixture into the creamy sauce. Stir in shredded cheddar cheese.
- Cover and cook on low for 3–4 hours. Stir halfway through.
- Serve over a bed of Fritos, top with extra cheese and toppings of choice.
