  • 1 packet Active Dry Yeast 2¼ teaspoons
  • 1/4 cup Granulated Sugar
  • 2 Eggs Room temperature
  • 4 cups Bread Flour All-purpose can be used
  • 1 teaspoon Salt
  • 1/4 cup Milk Powder Optional
  • 1 teaspoon Cardamom Optional
  • 1/4 cup Lemon Juice and Zest For filling
For the Frosting
  • 1/2 cup Raspberry Puree Strained for smooth texture
  • 8 oz Cream Cheese Softened
  • 2 cups Confectioners Sugar Adjust for desired consistency

Method
 

Step-by-Step Instructions
  1. Melt unsalted butter and warm milk to just warm. Combine warm milk with sugar and sprinkle yeast. Let sit for 5 minutes.
  2. Whisk together flour, salt, milk powder, and cardamom in a separate bowl.
  3. Add dry ingredients to the yeast mixture and knead for 5-10 minutes until soft. Let rise in a greased bowl for 1 hour.
  4. Blend fresh raspberries to make puree and strain.
  5. Beat cream cheese and butter until smooth, add raspberry puree and sugar, adjust sweetness.
  6. Roll dough into an 18x12-inch rectangle, spread filling, roll up, and slice into 12 pieces.
  7. Place rolls in a baking dish, let rise for 30-60 minutes. Preheat oven to 350°F and bake for 23-25 minutes.
  8. Cool for 10 minutes before frosting with raspberry cream cheese frosting.
