- Preheat the oven to 200°C (400°F).
- In a small mixing bowl, combine cayenne pepper, sweet Spanish paprika, and ground white pepper. Stir until evenly mixed.
- Lightly oil a baking tray. Arrange half of the orange slices on the bottom of the tray.
- Lay the salmon fillets skin-side down on top of the orange slices. Drizzle with olive oil and rub the spice mix onto the salmon.
- Sprinkle brown sugar and salt over the salmon, drizzle more olive oil, and bake for about 20 minutes.
- Allow the salmon to cool slightly before serving. Garnish with chopped cilantro and a squeeze of orange juice.
