Method
 

Instructions
  1. Preheat the oven to 200°C (400°F).
  2. In a small mixing bowl, combine cayenne pepper, sweet Spanish paprika, and ground white pepper. Stir until evenly mixed.
  3. Lightly oil a baking tray. Arrange half of the orange slices on the bottom of the tray.
  4. Lay the salmon fillets skin-side down on top of the orange slices. Drizzle with olive oil and rub the spice mix onto the salmon.
  5. Sprinkle brown sugar and salt over the salmon, drizzle more olive oil, and bake for about 20 minutes.
  6. Allow the salmon to cool slightly before serving. Garnish with chopped cilantro and a squeeze of orange juice.
