  • To taste Orange Bitters Optional; adds complexity, skip if unavailable.

Method
 

Step-by-Step Instructions
  1. In a medium saucepan, combine 1 cup of water, 1 cup of blueberries, 2 sprigs of fresh rosemary, and a thumb-sized piece of fresh ginger, sliced. Bring to a boil, then simmer for 20 minutes, stirring occasionally until fragrant.
  2. Remove from heat and let cool for 10 minutes. Strain syrup through a fine mesh sieve into a glass jar, pressing solids to extract blueberry goodness. Stir in 2 tablespoons of maple syrup and the juice of half a lemon.
  3. Fill two tall glasses with ice cubes. Pour in 1/4 cup of blueberry syrup to settle at the bottom, then top each glass with 1/2 cup of sparkling water, gently stirring to combine.
  4. Optionally, add a few dashes of orange bitters and stir gently. Garnish with rosemary or blueberries. Serve immediately.
