Making the Lemonade
- In a small saucepan, combine 1 cup of water, 1 cup of granulated sugar, the zest of one lemon, two sprigs of fresh rosemary, and two sprigs of fresh thyme. Over medium heat, bring the mixture to a gentle simmer, stirring occasionally until the sugar dissolves completely, about 5 minutes. Once done, remove from heat, let it cool, and strain out the herbs to create your aromatic simple syrup.
- In a large pitcher, pour in 1 ½ cups of fresh lemon juice along with the simple syrup you prepared, adjusting the sweetness to your liking. If making the cocktail, add 1 cup of vodka as well. Stir everything together gently until well incorporated.
- Fill the pitcher with ice cubes and carefully add 2 cups of club soda, stirring gently to preserve the fizz.
- Pour the drink into glasses filled with ice and garnish with lemon wheels and rosemary sprigs. Chill before serving for a refreshing experience.
