Method
 

Making the Lemonade
  1. In a small saucepan, combine 1 cup of water, 1 cup of granulated sugar, the zest of one lemon, two sprigs of fresh rosemary, and two sprigs of fresh thyme. Over medium heat, bring the mixture to a gentle simmer, stirring occasionally until the sugar dissolves completely, about 5 minutes. Once done, remove from heat, let it cool, and strain out the herbs to create your aromatic simple syrup.
  2. In a large pitcher, pour in 1 ½ cups of fresh lemon juice along with the simple syrup you prepared, adjusting the sweetness to your liking. If making the cocktail, add 1 cup of vodka as well. Stir everything together gently until well incorporated.
  3. Fill the pitcher with ice cubes and carefully add 2 cups of club soda, stirring gently to preserve the fizz.
  4. Pour the drink into glasses filled with ice and garnish with lemon wheels and rosemary sprigs. Chill before serving for a refreshing experience.
