Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and spray a 9x13 baking dish with cooking spray.
  2. Spread half of a 28 oz. bag of frozen Potatoes O’Brien evenly in the baking dish. Bake for about 15 minutes.
  3. Heat a tablespoon of olive oil in a skillet and sauté fresh baby spinach for 3 to 5 minutes until wilted.
  4. In a bowl, whisk together 6 large eggs and 1 cup of whole milk with seasonings until fully incorporated.
  5. Layer sautéed spinach over the baked potatoes, then pour the egg mixture on top.
  6. Scatter crumbled feta cheese evenly over the casserole.
  7. Bake in the preheated oven for about 40 minutes until the eggs are set and top is golden brown.
  8. Let cool for 5 minutes, then garnish with chives and hot sauce before serving.
