- Spread half of a 28 oz. bag of frozen Potatoes O’Brien evenly in the baking dish. Bake for about 15 minutes.

- In a bowl, whisk together 6 large eggs and 1 cup of whole milk with seasonings until fully incorporated.
- Layer sautéed spinach over the baked potatoes, then pour the egg mixture on top.
- Scatter crumbled feta cheese evenly over the casserole.
- Bake in the preheated oven for about 40 minutes until the eggs are set and top is golden brown.
- Let cool for 5 minutes, then garnish with chives and hot sauce before serving.
