For the Strawberries
  • 1 cup Fresh Strawberries chopped
For the Icing
  • 1/2 cup Strawberries mashed for flavoring the glaze
  • 1 cup Powdered Sugar look for organic versions
  • 1 teaspoon Vanilla Extract opt for pure for the best flavor
  • 2 tablespoons Water to adjust glaze consistency

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and prepare a loaf pan.
  2. Wash and dry the strawberries; chop them and toss in a bit of flour.
  3. Whisk together the flour, matcha, baking powder, and salt in a bowl.
  4. Mash the bananas, then mix in sugar, oil, and oat milk until smooth.
  5. Gently fold the dry ingredients into the wet ingredients until just combined.
  6. Fold in the floured strawberries and transfer to the prepared loaf pan.
  7. Bake for 40-50 minutes, checking with a skewer for doneness.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack.
  9. Mash strawberries with powdered sugar and vanilla to prepare the icing.
  10. Drizzle glaze over the cooled bread and allow to set before slicing.
