Method
 

Marinating and Grilling
  1. In a mixing bowl, combine honey, lime juice, olive oil, garlic powder, chili powder, salt, and black pepper. Stir well, then add chicken breasts. Coat chicken thoroughly and let marinate for at least 30 minutes or overnight for best flavor.
  2. Preheat your grill to medium-high heat (around 375°F). Heat the grill grates for about 10-15 minutes until hot.
  3. Remove chicken from marinade, shaking off excess. Place on the grill and cook for 5-7 minutes until grill marks appear. Flip and cook for another 5-7 minutes until internal temperature reaches 165°F.
  4. To prepare the mango salsa, dice mango, red onion, and cilantro in a bowl. Stir gently, season with salt and lime juice.
  5. Once the chicken is grilled, let it rest for a few minutes. Plate and top with mango salsa. Serve alongside rice, quinoa, or in tortillas.
