Preparation
- Preheat the oven to 350°F (175°C). Gather your ingredients and equipment.
- In a large mixing bowl or stand mixer, combine ground beef, ground pork, finely chopped yellow onion, eggs, and dried bread crumbs. Blend gently until just combined.
- Shape the meat mixture into a squat oval, about 2 inches thick, on a lined baking sheet.
- Bake in the preheated oven for 75-80 minutes, or until the internal temperature reaches 155°F (68°C). The top should be golden brown.
- Allow the meatloaf to rest for 5-10 minutes before slicing.
- In a saucepan over medium heat, melt butter, stir in flour to form a roux, then gradually whisk in beef stock and Worcestershire sauce until thickened.
- Remove gravy from heat, stir in sour cream until smooth. Adjust seasoning as needed.
- Slice the meatloaf, serve with gravy, and garnish with parsley. Optionally, add lingonberry jam.
