Ingredients
  

For the Shrimp
  • 1 pound Shrimp, peeled and deveined Fresh or frozen
  • 2 tablespoons Olive Oil Or avocado oil
  • 1 tablespoon Curry Powder Mild variety for less heat
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Garlic Powder Or fresh garlic
  • 1/2 teaspoon Cayenne Adjust to taste
  • 1 tablespoon Butter Optional
  • 1 tablespoon Honey Maple syrup for vegan
For the Salad
  • 2 cups Peaches, chopped Fresh and ripe, or mango
  • 1 cup Cucumber, chopped Zucchini as alternative
  • 2 tablespoons Lime Juice Freshly squeezed
  • 1/4 cup Mint Leaves Basil as alternative

Method
 

Preparation
  1. Begin by washing and chopping the fresh peaches and cucumber into bite-sized pieces. In a large bowl, combine these chopped fruits and vegetables with freshly squeezed lime juice and torn mint leaves. Toss gently to coat, and let sit for about 5 minutes.
  2. In a medium bowl, add the peeled and deveined shrimp. Sprinkle in the curry powder, smoked paprika, garlic powder, and cayenne, and toss until thoroughly coated. Let sit while prepping the skillet.
  3. Heat 2 tablespoons of olive oil in a skillet over medium heat. Once hot, add the seasoned shrimp and sauté for about 3-5 minutes, until pink and opaque. Add a tablespoon of butter and honey during the last minute, if desired.
  4. Plate the shrimp over rice, if desired, and serve the peach salad alongside.
