Step-by-Step Instructions
- Select a USDA Choice or Prime brisket with good marbling. Trim excess fat while leaving a thin layer to keep the meat moist.
- Generously sprinkle the prepared brisket with the Texas-style rub, ensuring an even coating. Allow it to sit at room temperature for about 30 minutes.
- Preheat your oven to 250°F (120°C). Prepare a roasting rack inside a large, rimmed baking pan.
- Place the brisket fat-side up on the rack and cook undisturbed for about 1 hour per pound.
- Once the internal temperature reaches 165°F (74°C), wrap the brisket tightly in foil or butcher paper and return to the oven for an additional 3 to 4 hours.
- Let the brisket rest, still wrapped, for 30 minutes to 1 hour at room temperature to allow juices to redistribute.
- Unwrap the brisket carefully and slice against the grain to serve.
