- Boil a pot of salted water and cook elbow macaroni for 7–8 minutes until al dente. Drain and set aside.
- In a medium saucepan, melt butter, whisk in flour, then add milk and cream. Stir for 4–5 minutes until thick.
- Fold in cooked macaroni with cheese and truffle oil. Chill in the fridge for 30 minutes.
- Preheat the waffle maker and grease with cooking spray or oil.
- Scoop the mac and cheese mixture into the waffle maker and cook for 4–6 minutes until crispy.
- To assemble, place two waffles back to back with cheese or aioli in between and serve immediately.
