  • 1/4 cup all-purpose flour whole wheat flour is a healthier alternative
  • 2 cups whole milk swap for almond milk or oat milk for dairy-free
  • 1 cup heavy cream replace with coconut cream for dairy-free
  • 1 cup sharp cheddar cheese experiment with gouda or fontina
  • 1 cup mozzarella cheese vegan mozzarella works beautifully
  • 1/2 cup parmesan cheese nutritional yeast can be used for vegan
  • 1 tablespoon truffle oil truffle salt can be a good alternative
  • salt and pepper essential for seasoning
For the Waffles
  • cooking spray or oil to grease the waffle maker
  • additional cheese or aioli used as a filling to enhance flavor

Method
 

Step-by-Step Instructions
  1. Boil a pot of salted water and cook elbow macaroni for 7–8 minutes until al dente. Drain and set aside.
  2. In a medium saucepan, melt butter, whisk in flour, then add milk and cream. Stir for 4–5 minutes until thick.
  3. Fold in cooked macaroni with cheese and truffle oil. Chill in the fridge for 30 minutes.
  4. Preheat the waffle maker and grease with cooking spray or oil.
  5. Scoop the mac and cheese mixture into the waffle maker and cook for 4–6 minutes until crispy.
  6. To assemble, place two waffles back to back with cheese or aioli in between and serve immediately.
