Preparation Steps
- Marinate carne asada according to your favorite recipe, grill or sear over medium-high heat for 6-8 minutes per side, then let rest before chopping.
- Preheat your oven’s broiler to high heat with the rack about 6 inches from the heating element.
- Spread a single layer of corn tortilla chips on a baking sheet, sprinkle half of the shredded Oaxaca cheese over the chips.
- Evenly distribute the chopped carne asada over the cheese, then add the remaining shredded Oaxaca cheese on top.
- Place the baking sheet under the broiler for about 2 minutes until the cheese is melted and lightly golden, but not bubbling excessively.
- Remove from oven and layer with warm Mexican rice, fresh corn kernels, crumbled queso fresco, a drizzle of Mexican crema, and chopped cilantro, then add radishes and sliced jalapeños.
- Serve immediately while hot with salsa or guacamole on the side.
