  • 1 ounce Lemon Juice Freshly squeezed
  • 2 ounces Botanical Gin Can substitute with London Dry gin
For the Thyme Syrup
  • 1/2 cup Sugar Adjust to taste
  • 1/2 cup Water Distilled water can enhance flavors
For the Fizz
  • 2 cups Sparkling Water Add just before serving

Method
 

Step-by-Step Instructions
  1. In a small saucepan, combine sugar, water, and fresh thyme. Heat over medium heat until it reaches a gentle simmer—about 5 minutes. Remove from heat, cool, and strain out the thyme.
  2. Juice 1 lemon until you have about 1 ounce of fresh lemon juice. Strain through a fine mesh sieve.
  3. In a shaker or large jar, combine fig jam, botanical gin, lemon juice, and cooled thyme syrup. Stir or shake until smooth.
  4. Fill glasses with ice and strain the cocktail mixture over the ice.
  5. Garnish with a sprig of thyme or slice of fig.
