For the Dressing
  • 1 cup Plain Greek Yogurt Can substitute with sour cream or plant-based yogurt.
  • 3 tbsp Freshly Squeezed Lemon Juice Fresh juice is best for enhanced flavor.
  • 1 tbsp Mustard Any variety such as Dijon or whole grain works well.
  • 1/4 cup Extra Virgin Olive Oil Avocado oil can be a lighter alternative.
  • 1 tbsp Fresh Mint Can mix or stick to favorite herbs.

Method
 

Step-by-Step Instructions
  1. In a blender, add the Greek yogurt, lemon juice, mustard, and olive oil. Blend until smooth, about 30 seconds. Season to taste with salt and pepper, and add fresh herbs. Set the dressing aside.
  2. Rinse the super greens mix and kale under cold water. Spin dry and tear the kale into bite-sized pieces. Place the greens in a large bowl.
  3. Slice the strawberries and add to the bowl with the greens along with the blackberries and blueberries. Toss gently to mix.
  4. Sprinkle the pistachios and pepitas over the salad and gently fold them in.
  5. Crumble the blueberry goat cheese over the salad and toss gently.
  6. Drizzle the creamy dressing over the salad and toss to coat. Serve immediately, garnishing with freshly ground pepper if desired.
