Ingredients
  

Chili Base
  • 2 lbs Lean Ground Turkey Substitute with ground chicken if desired.
  • 2 15 oz cans White Northern or Navy Beans Rinsed and drained.
  • 1 15 oz can Pumpkin Puree Homemade puree can be used for freshness.
  • 2 cups Low Sodium Chicken Broth Swap for vegetable broth for vegetarian.
Aromatics
  • Olive Oil Spray Use to grease your skillet.
  • 1 small Onion Chopped, yellow onion is best.
  • 3 cloves Garlic Minced.
Spices
  • 1 tsp Chili Powder Adjust according to your spice preference.
  • 1.5 tbsp Cumin Essential for good chili flavor.
  • 1 tsp Oregano Italian seasoning could be a substitute.
  • 2 Bay Leaves Remove before serving.
Kick
  • 1 4.5 oz can Chopped Green Chile Use jalapeños for more heat.
  • Kosher Salt Essential for seasoning.
  • Pepper Essential for seasoning.
Garnishing
  • Toppings Use cilantro, red onion/chives, Greek yogurt or sour cream.

Method
 

Step-by-Step Instructions
  1. In a large skillet, spray with olive oil and heat over medium-high. Add ground turkey and cook for about 5 minutes, breaking apart until browned. Transfer to slow cooker or Instant Pot.
  2. In the same skillet, add onion and sauté for 3-4 minutes until translucent, then add garlic and sauté for another minute until aromatic.
  3. Combine sautéed onion and garlic with beans, pumpkin puree, green chiles, chicken broth, chili powder, cumin, oregano, and bay leaves in the slow cooker or Instant Pot.
  4. For Slow Cooker: Cover and cook on high for 4 hours or low for 8 hours. For Instant Pot: Seal lid and cook on high pressure for 25 minutes, then natural release for 10 minutes.
  5. Remove bay leaves, taste for seasoning, and adjust with salt and pepper as needed. Serve warm with toppings.

Notes
