- In a large skillet, spray with olive oil and heat over medium-high. Add ground turkey and cook for about 5 minutes, breaking apart until browned. Transfer to slow cooker or Instant Pot.
- In the same skillet, add onion and sauté for 3-4 minutes until translucent, then add garlic and sauté for another minute until aromatic.
- Combine sautéed onion and garlic with beans, pumpkin puree, green chiles, chicken broth, chili powder, cumin, oregano, and bay leaves in the slow cooker or Instant Pot.
- For Slow Cooker: Cover and cook on high for 4 hours or low for 8 hours. For Instant Pot: Seal lid and cook on high pressure for 25 minutes, then natural release for 10 minutes.
- Remove bay leaves, taste for seasoning, and adjust with salt and pepper as needed. Serve warm with toppings.
