Step-by-Step Instructions
  1. In a medium saucepan, combine lemon zest, sugar, water, and mint leaves. Bring to a gentle boil, stirring until sugar dissolves. Simmer for 10-15 minutes, then remove from heat and strain.
  2. Cut watermelon into chunks and blend until smooth. Strain through a fine mesh sieve into a pitcher to extract juice.
  3. Add lemon juice and cooled syrup to watermelon juice. Stir in cold water and mix well.
  4. Chill in the refrigerator for at least 30 minutes. Serve over ice, garnished with mint or watermelon.
